This could be your recipe
THAI FRUIT SALAD
Tropical fruit (pineapple, banana, lichee, kiwi, mango, melon etc.)
2 or 3 chillis (red and/or green)
1 tablespoon fresh lemon or lime juice
1 tablespoon brown sugar
1 or 2 tablespoon sesame oil
1 tablespoon fish sauce (yes! fish sauce from the Chinese supermarket)
1 shallot
A handful of fresh coriander sprigs/leaves
Fruit should not be over-ripe
- Cut the fruit into pieces
- Chop the coriander finely
- Cut the chillis into very thin rings
- Slice the shallot into small pieces
- Put everything in a salad bowl
- Stir it up
This may sound weird, but it tastes amazing and seems to meet with surprised approval. You can also add sesame seeds and cashew nuts or peanuts for garnish
